Summer rhubarb

1 L of rhubarb, diced

Cut the leaves and the ends of the rhubarb stems.

Peel and dice the rhubarb in 2.5 cm pieces.

Prepare enough rhubarb to get 1 litre.

Put the rhubarb in a pan with the water and the baking soda.

Cover and bring to a boil over medium heat.

When the water is boiling, stir for a few minutes and let it boil for about 5 minutes.

Remove from heat and add the sugar.

When the rhubarb is cooked this way, it is easier to digest. It is never acid and you don' t have to add a lot of sugar.
