Rhubarb marmalade #3

Press the orange juice.

Cut the peel of the orange and slice it really thin.

Boil the peel in water until tender, about 15 minutes. Drain.

Combine the orange juice, rhubarb, sugar and raisins.

Let sit for 30 minutes.

Bring to a boil and cook until thickened, about 30 minutes, stirring frequently.

Add the orange peel and nuts. Cook until thickened, about 5 minutes, stirring constantly.

Skim and stir for 5 minutes.

Pour in sterilized jars, cool and seal.

Yield: about 6 cups.

125 ml of water

60 ml of nuts, chopped

250 ml of raisins

1.8 L of rhubarb, chopped

1 orange
