Simmered pink winter rhubarb

Wash and cut the rhubarb in pieces.

Put the rhubarb pieces in an enamelled cast iron pan or pyrex pan.

Add the water.

Cover and simmer for 20 minutes.

Stir twice while it’s cooking.

Add the honey.

Stir well.

Flavour with cinnamon, nutmeg, lemon rind or orange rind.

Add some raisins or crystallized ginger, or mix with an equal amount of fresh diced pineapple sweetened with maple syrup.


30 ml of water

- pineapple, diced (optional)

- cinnamon, nutmeg, lemon rind or orange rind

250 ml of honey or sugar

500 ml of rhubarb

- crystallized ginger (optional)

- raisins (optional)
