Les Fermes Serbi grow staked tomatoes. The tomato crop covers an area of over 20 hectares, meaning 60,000 cans of tomatoes, or 1,200,000 pounds of tomatoes per year. A leader in Quebec because of a state-of-the-art system, Serbi has always been ahead of its time. They favour a drip irrigation system, a method that highly promotes the quality of the tomatoes.
First, wash the tomatoes, if desired, peel, deseed and trim them.
Peeling or blanching
Immerse the tomatoes in boiling water for 15 to 30 seconds (they should not cook or soak) and let cool or rinse under cold running water.
Cut the tomato in half and press each half to get the juice and seeds out, then remove the remaining seeds.
Remove the hard part that was holding the stalk by cutting around it.
Keep tomatoes at room temperature and away from sun. They will keep for about a week. Wash them only before using. Keep well-ripened tomatoes in the fridge to slow down the ripening process. They will last for 2 to 3 days. To enjoy all their flavour, take them out of the fridge about thirty minutes before eating.
Tomatoes are a good source of vitamins and potassium. They also contain folic acid and vitamin A.
